During the pandemic she returned to the farm, bringing that experience back into a family project focused on careful agronomy and producing distinctive coffees. \u003cspan class=\"contents\"\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eThis Orange Gesha is grown between 1,600 and 1,850 metres and undergoes a washed thermal shock process. After selection and flotation, the cherries undergo 24 hours of oxidation before pulping, followed by a further 24 hours of oxidation and a 72-hour fermentation with yeast, Gesha pulp and mosto from a previous fermentation. The coffee is then washed with cold water to halt fermentation before drying.\u003c\/p\u003e\n\u003cp\u003eThe result is floral and incredibly clean, with bright lemongrass leading into orange peel and marmalade.
