Ivan Sebay’s Pink Bourbon is bright, structured, and intensely clean.
Ivan moved with his family from northern Huila to Los Cauchos in search of better opportunities and safer conditions for coffee farming. Working alongside neighbours and local producers, he began building new plots focused on high-quality varieties such as Pink Bourbon, Papayo, and Gesha.
This lot is produced using extended cherry and tank fermentation followed by slow drying over 14 to 25 days. Throughout the process, Ivan has worked closely with Minga to refine and improve cup quality through repeated feedback and experimentation.
The result is a coffee with vivid acidity and a clean sweetness reminiscent of red apple, hibiscus tea, and cane sugar.
