Ethiopia - Huakui 11
Huakui 11 · Hambela, Guji, Ethiopia
Rose · Peach · Blueberry
A vibrant natural Ethiopian coffee with huge fruit character, soft florals and the kind of sweetness that made the Huakui series famous in the first place.
Huakui originates in Hambela, Guji, and developed a cult following in China after a natural coffee from the area won Ethiopia’s Taste of Harvest competition in 2017. Subsequent crops have been released under numbered editions, with the 2026 harvest arriving as Huakui 11.
This lot was sourced through Hongshun Coffee’s Huakui programme. Grown at 2,200 to 2,350 metres, it is made up of Ethiopian landrace varieties and undergoes a customised natural process designed to preserve the ripe fruit character Hambela is known for.
For us, this coffee is all about fragrance and fruit.
The cup opens with a distinct rose-like floral aroma, followed by juicy peach sweetness and a ripe blueberry character that becomes increasingly obvious as the coffee cools. It is expressive without becoming heavy, with plenty of sweetness and a clean finish.
Brew Guide
Filter
- 15g coffee
- 250g water
- 93°C
- Medium-fine grind
- 2:30-3:00 brew time
Keep agitation relatively gentle. A slightly longer ratio helps separate the floral and fruit character rather than pushing the natural-process sweetness too hard.
Espresso
- 18g in
- 45g out
- 28-32 seconds
A longer espresso ratio keeps the blueberry and peach clear while allowing the floral character to come through.
